  1. I start this off by sautéing my mushrooms in a little bit of butter till they are soft I season them with salt and pepper a little garlic powder in a small six inch non stick skillet
  2. After the mushrooms are cooked through I add my baby spinach usually a good size handful, I add salt to help wilt down the spinach and right at the end I hit the bottom of the pan w some white balsamic vinegar to amp up the taste. I put the spinach and mushrooms in a bowl and wipe the pan out
  3. Put the pan back on the heat and I add a coat of cooking spray then crack my eggs into the pan ( you can make scrambled or fried poached or any kind of egg you like) while your egg is cooking I put my tortilla on the plate and sprinkle the cheese in the bottom
  4. When my eggs are done I slide them out of the pan into the tortilla on top of the cheese then put down the slices of tomatoes then drain any liquid out of the bowl your spinach and place on top of your tomatoes (the heat from the eggs and the spinach will heat your tomatoes and melt the cheese) I like to add a few dashes of hot sauce to the top then fold the whole wrap like a giant burrito cut down the middle and enjoy!
