The ingredients needed to prepare Kerala mango pickle:
- Provide 1/2 kg raw mango, cleaned and cut into small square pieces
- Prepare 2 tbsp ginger garlic paste
- Provide 3 green chillies chopped
- You need 1 handful curry leaves
- Get 1 tbsp mustard
- Prepare 1 tsp fenugreek seeds
- You need 1 cup half vinegar and half water
- You need 1 tbsp Asafoetida powder
- Get 2 to 3 tbsp Kashmiri chilli powder
- Get as per tatse Salt
- Use 4-5 tbsp gingerly oil
Instructions to make Kerala mango pickle:
- Mix the cut mango pieces with salt and chilli powder.And keep aside for 5 to 6 hrs.
- In a deep bottomed pan add oil,then fenugreek,when it starts to splutter add mustards.add ginger garlic,green chillies saute well.add then the curry leaves and saute untill it's water dries out completely.
- Then add vinegar mixture.when it boils add the mango pieces and asafoetida.and mix well.let it boil for a few minutes.till the gravy starts to thicken. Put off the flame and remove from the stove top
- Check the salt.let it remain in the pan for 1 day and then remove it to a glass bottle.and enjoy with your meals.
