  1. Get 3 tbsp Vegetable Oil
  2. Take 1 cup Tomato Chopped
  3. Use 1 inch Ginger Chopped
  4. Provide 2-3 Green Chilli
  5. Take 1/2 tsp hing / asafoetida
  6. Provide 1 tsp jeera / cumin seeds
  7. Take 2 tsp Coriander Powder Coarsely Ground
  8. You need 1 tsp Fennel Powder
  9. You need 1/2 tsp Turmeric Powder
  10. Take 2 tsp Kashmiri Red Chilli Powder
  11. Prepare 1/2 tsp Garam Masala Powder
  12. Use 400 g Potato Boiled and peeled
  13. Use To taste Salt
  14. Use 1 tsp Amchoor Powder
  15. Take 2 tbsp Fresh Coriander Chopped
Steps to make Aloo sabji:
  1. Add tomato, ginger and green chilli in a bowl and blend to make a smooth puree.
  2. Heat oil in a pan. Once the oil is hot, add hing and jeera and let them crackle for a few seconds
  3. Add coriander powder, fennel powder, turmeric powder, kashmiri red chilli powder and garam masala powder and cook until oil separates from the sides.
  4. Break the potatoes using your fingers roughly and add them in the pan. Add water, amchoor powder and salt to taste.
  5. Cook for 3-4 minutes. Add more water if required. The gravy is supposed to be thin
  6. Garnish with fresh coriander. Serve hot with poori or Kachori.
