- Provide as required Water for soaking
- Prepare 3/4 cup whole moong dal

- Firstly in a large kadhai heat oil.
- Further, add mustard seeds, cumin and hing allow to splutter.
- Additionally, add onions and continue to saute.
- Also, add ginger garlic paste and green chilli. saute well till the raw aroma disappears
- Furthermore, add tomato and saute well. Saute till the tomatoes turn soft and mushy.
- Additionally, add turmeric, chilli powder, coriander powder, garam masala powder, dry mango powder, jaggery and salt.
- Saute on low flame till the masala gets cooked well completely and releases oil from sides.further add sprouted moong dal.
- Also add water and mix well.
- Adjust the consistency by adding water as required.
- Cover and simmer for 20 minutes or pressure cook for 2 whistles.
- Cook the dal well however, do not over cook as the sprouts will loose their nutritional value.
- Finally, serve sprouts curry along with jowar roti or rice.
