The ingredients needed to make Lahori Mutton Curry:
  1. Prepare 500 gms mutton with bones, cut into desired size
  2. Prepare to taste salt
  3. Take 1 tbsp. ginger-garlic paste
  4. Take 1 tsp. raw papaya paste
  5. Provide 1 tbsp. coriander-cumin powder
  6. Prepare 1 tbsp. red chilli powder
  7. Take 1/2 tsp. turmeric powder
  8. Take 2 tbsp. oil
  9. Get 1 " cinnamon stick
  10. Provide 3 green cardamoms
  11. Use 6 cloves
  12. Get 1 tsp. garlic, chopped
  13. Take 2 onions, chopped
  14. Get 1 tomato, chopped
  15. You need 1 tsp. tomato paste
  16. Get 1 tbsp. fried cashew powder / paste
  17. Take 1/2 cup yoghurt
  18. Get 1 tbsp. fried onion powder / paste
  19. Take 1-2 tsp. ghee
  20. Prepare 1/2 tsp. garam masala powder
  21. Take 1 tsp. crushed kasuri methi (dry mint leaves)
  22. Prepare pinch nutmeg powder
  23. Provide pinch mace powder
  24. Prepare 3 whole dry red chilies
  25. Take 7-8 few onion rings to garnish (opt)
Instructions to make Lahori Mutton Curry:
  1. Marinate the mutton with 1/2 tsp. salt, ginger-garlic paste, raw papaya paste, turmeric powder, red chilli powder, turmeric powder and coriander-cumin powder overnight.
  2. Heat oil in a pan and temper with cinnamon, cardamoms and cloves. Saute for a few seconds.
  3. Then add the garlic add fry till light brown.
  4. Now add the onion and continue to fry till light golden in colour.
  5. Add the tomatoes and the tomato paste. Saute well till it is mashed.
  6. Add the marinated mutton,
  7. Cashew powder, fried onion powder,
  8. Yoghurt and
  9. Ghee one after the other. Mix everything well and cook on a medium flame till the moisture evaporates.
  10. Add 1/2 cup water and remaining salt to taste.
  11. Pressure cook for 20-25 minutes on a low flame after the first whistle.
  12. When done, add the whole dry red chilies, garam masala powder, mace powder, nutmeg powder and kasuri methi. Mix well and bring it to boil. Switch off the flame.
  13. Garnish with onion rings and serve with plain steamed rice, plain Biryani, jeera rice, pulao, tandoori roti, rumali roti, naan or just plain chapatti.
