  1. You need 1 large Onion
  2. Take 1 stick Celery
  3. Provide 1 Salt, pepper, garlic powder, parsley
  4. Take 2 lb Alligator! If you don't or can't get alligator use chicken and pork
  5. Take 1 lb Andouille or beef sausage
  6. Prepare 3 cup Rice
  7. Prepare 5 cup Water
  8. Take 1 Bell pepper red or green or 1/2 each is what I use
  9. Get 2 tbsp Kitchen bouquet
Instructions to make Alligator Jambalaya:
  1. Preheat oven to 425
  2. Mix all ingredients together in a Dutch oven and bake covered for about two hours
  3. After first 45 minutes stir you may need to add another 1/2 cup of water
  4. Continue baking till rice is fully cooked. If rice is too mushy for your taste bake for 10-15 minutes uncovered
