- Use 3/4 lb to 1 lb. smoked ham steak
- Provide 8 eggs
- Get 1 cup milk
- Use 1/2 tsp salt
- Take 1/4 tsp pepper
- Get 1/4 tsp garlic powder
- Take 1 1/2 to 2 cups shredded cheese your choice - i use mexican blend

- Preheat oven to 350
- Melt butter in a frying pan. Saute onion & green pepper over medium heat for 10 -15 mins or until onion is translucent or browned - your preference. Remove from heat.
- Dice ham steak - remove any fat & casing on edges.
- Grease a 13x9 casserole dish. Evenly press in seasoned potatoes.
- Evenly spread onions, green peppers & ham on top of potatoes.
- In a medium bowl, whisk together 8 eggs, 1 cup milk, salt, pepper & garlic powder.
- Pour on top of casserole.
- Sprinkle on 1 1/2 to 2 cups shredded cheese.
- Bake, uncovered, 40 - 50 mins - till eggs are set & top is golden brown.
