  1. Prepare 300 g rice vermicelli (meehoon) - soak in water for 5 minutes and drain
  2. Use 300 g prawns - peel and devein

  8. Use 1/3 cup cooking oil

  12. Get 4 shallots
  13. Prepare 1 1/2 tsp turmeric powder
  14. Take 3 Tbsp chopped ginger flower (Bunga Kantan)
  15. Get 1 stalk lemongrass chopped finely
  16. Provide 3 bird eye chilies (if you like it spicy)
  17. Get Seasonsings:
  18. Get 2 Tbsp fish sauce
  19. Get 1 Tbsp soy sauce
  20. Use 1/2 Tbsp tamarind paste
  21. Provide 2 tsp sugar
  22. Prepare 1 tsp chicken stock granules
  23. You need 1/2 tsp white pepper
  24. Get 2 cups water
Steps to make Mee Siam:
  1. Prepare all the ingredients!
  2. Heat oil in the wok. Lightly fry the dried shrimps and tofu but separately. Dish out and put aside.
  3. Stir fry the pounded ingredients and kaffir lime leaves until aromatic. Add prawns and fry until they are half-cooked. Dish out only the prawns and put aside.
  4. Add in seasonings and bring to boil. Then add meehoon and stir-fry.
  5. Mix in dried shrimps, tofu, prawns, chives and beansprouts. Mix them well for 3 minutes or until everything are cooked.
  6. Serve with cut lime at the side to drizzle if preferred.

The dish is usually topped with spring onions, red chili peppers, fried onions, coriander, and omelet strips, while lime wedges are. This Mee Siam is based on the Malaysian version - which is a hot and spicy dry noodle dish. There's also a Singapore version that's similar, but is served with a spicy gravy. I decided to go for the Malaysian version because it was easier to modify in order to make it into a quick dish.
