- Provide 3 glasses rice
- Provide 3/4 kg Prawns (peeled, cleaned, deveined)
- Provide 4 1/2 glasses water

- You need 1 1/2 tbsp chilli powder
- Prepare 1/2 tbsp turmeric powder
- Prepare 1 1/3 tbsp coriander powder
- Take 1 tbsp cumin powder
- Take 1/2 tbsp garam masala (optional)
- Provide 1/2 tbsp dried Fenugreek/ kasuri methi (optional)
- Provide As needed - rock salt
- Take For Vegetables-
- Take 2 onions
- Use 2-3 green chillies
- Prepare 1 inch ginger
- Take 5-6 garlic cloves
- Use As needed - coriander leaves
- Take As needed - mint leaves
Instructions to make Prawn pulao:
- Soak rice in water for half an hour
- Cut the vegetables. Make the ginger-garlic paste.
- Heat oil and ghee in a pan.
- Add spices. Cook for half a minute. Add onions and green chillies. Cook until the onions become translucent.
- Add ginger-garlic paste and pepper.
- Wait until the onions brown /caramelise. Add salt,turmeric, chilli powder. Mix thoroughly. Let it cook for 2 minutes.
- Add mint. Cook for a minute. Add coriander and cashew nuts. Cook until the cashews brown a little.
- Add the prawns. Mix carefully without breaking them. Cook for 1 minute (until they start to become slightly C-shaped)
- Add cumin powder, coriander powder, garam masala, dried Fenugreek. Mix well.
- Add water(1:1.5 ::rice:water). Put a lid on it until it starts to boil. Taste the water to check for salt and spice.
- Drain the rice thoroughly.
- Once the water boils, add the rice. Mix carefully.
- Cook it in a pressure cooker for 15 minutes on low flame.
- Mix and serve. Garnish with lemon and onions.
Light spices and cashews gives this pulao an amazing flavor and taste. T he inspiration of this Prawn Pulao came from Mishmash's CheMmeen Biryani. I call it "CheenMeen" which sounds so lyrical that it is hard to get it out of my head. It is like raindrops but better.
