The ingredients needed to prepare Bacon Cheesy Spuddies:
  1. Provide 15 ml olive oil
  2. Prepare 4 medium potatoes
  3. Provide 1,5 cups greated cheddar cheese
  4. You need 100 ml cream cheese,
  5. Provide 200 g streaky bacon, fried and chopped up
  6. Take 2 tbsp chopped parsley
  7. Take 1 tsp salt
  8. Take 1 tsp freshly ground black pepper
Instructions to make Bacon Cheesy Spuddies:
  1. Preheat the oven to 200˚C.
  2. Thoroughly scrub the potatoes and poke a few holes in them to vent. Brush with oil and bake in the oven for 1 hour or until soft. Turn them over halfway.
  3. Remove the potatoes from the oven and let them rest until they are cool enough to handle.
  4. Cut the potatoes in half, lengthwise. Using a melon baller or a spoon, carve out the center of each potato, being careful not to make the walls too thin.
  5. Put a bit of the bacon and parsley aside for garnish.
  6. Mix together the potatoes insides, 1cup cheddar cheese, cream cheese, bacon, parsley, salt and pepper. Scoop the mixture back into the potatoes.
